Regarding
L'Ou" means "egg" in Catalan: this is the name of the locality where the property is situated, as at the time there was an ovoid-shaped resurgence of water at this spot. Mas de L'Ou, which appears to have been run by the Knights Templar, was a popular stopping-off point for muleteers from the region. In 1998, Séverine and Philippe Bourrier bought the 30-hectare estate, planted with 26 hectares of vines and 4 hectares of olive trees in the commune of Montescot. The entire estate was immediately converted to organic farming. At the time, this was a highly avant-garde approach, which had won over only 3 estates in Roussillon. In 2009, Séverine and Philippe decided to expand the estate's terroirs, adding 8 hectares of vines in Saint-Paul-de-Fenouillet and 7 hectares of vines in Caudiès-de-Fenouillèdes, both grown organically in the Haute Vallée de l'Agly.
